🌱 Ingredients (Serves 1)

  • 100 g organic halloumi, sliced
  • 1 ripe organic avocado (approx. 150 g flesh), sliced

3️⃣ Arrange the greens neatly on your serving plate, layer on the sliced avocado and warm halloumi.
4️⃣ Sprinkle with the toasted pumpkin seeds and garnish with fresh herbs or microgreens if desired.
5️⃣ Serve immediately and enjoy the creamy, salty, nutty deliciousness.

🔄 Make it your own

  • Add crunch: Toss in a handful of chopped raw walnuts or pecans for extra omega-3s.
  • Switch the seeds: Sunflower seeds or hemp hearts work beautifully too.
  • Try other greens: Peppery watercress, fresh rocket, or even shredded kale add a lovely bite.
  • Spice it up: A sprinkle of chilli flakes or a drizzle of chilli oil lifts the flavour if you like a gentle kick.
  • For a fresh twist: Add a few cherry tomatoes or cucumber ribbons (keeping in mind small additions to stay keto).

Eat well, live vibrantly, and savour every bite. 🌿✨
